Training matters too — not just on food safety and upselling, but on managing stress and de-escalation. Simple role plays once a month can give staff scripts that reduce anxiety when a difficult table arrives.

I know a sous chef who was finishing a part-time degree while working nights; he eventually asked for a slightly adjusted schedule so he could study.
